docs: switch versioning prose to a compat table on 1.x#4

The original "share a minor version during 0.x" line is no longer accurate — elm-mount shipped as 1.0.0 and the other two siblings are also aligning at 1.x. Replacing the prose with the same compat table the bootstrap and elm-wp READMEs use, all reading "1.x".
